Avocado, Strawberry and Spinach Salad

1/2 tablespoon stevia [+]
2 tablespoons olive oil [+]
4 teaspoons honey [+]
1 tablespoon cider vinegar [+]
1 teaspoon lime juice [+]
4 cups spinach greens [+]
2 avocados, peeled, pitted and sliced [+]
15 strawberries, sliced [+]
1/2 cup chopped pecans [+]
1 ounce goat cheese crumbled  [+]

Method

 

1. In a small bowl, whisk together the stevia, olive oil, honey, vinegar, and lime juice.  Set the dressing aside.

2. P
lace the spinach greens on a nice salad plate, and top with sliced avocado and strawberries. Drizzle the dressing over everything, and then sprinkle with pecans and crumbled goat cheese. Refrigerate for up to 2 hours before serving, or serve immediately.

3. If placing in refrigerator do not peel the avocados until ready to serve.
