Breakfast Omelet Muffins

This breakfast item is customizable - pick your toppings! Easy and convenient. (& gluten free!) Just pop them into plastic bags so that you can grab them easily in the morning. (I always grab mine with a cup-o-coffee!)

6-12 eggs
splash of milk
salt and pepper
toppings: broccoli, mushrooms, peppers, ham, turkey, cheese, etc

Method

1. Preheat oven to 375 degrees F.  Grease cupcake pan.

2. Crack eggs, beat with splash of milk (for fluffiness), and season with salt and pepper.  Pour egg into a greased cupcake pan.

3. Add toppings (whatever you would typically include in an omelet).

4.
Bake in the oven for 30 minutes and let them cool.
