Gluten Free Cream Cheese Pie Crust
Ingredients[+] Add all ingredients
2 teaspoons baking powder [+]
1/4 teaspoon salt [+]
1/4 teaspoon zantham gum [+]
1 cup (2 sticks) butter, softened [+]
1 (8-ounce) package cream cheese, softened [+]
1 egg, beaten slightly [+]
1/4 cup sugar (optional, but I think it adds to the flavor) [+]
extra flour blend, for rolling out [+]
1. Mix dry ingredients into the flour, set aside.
2. Cream butter and cheese together until smooth and fluffy. Add egg, blend well, but do not overbeat. Add flour mixture in small increments. If using a mixer, use slow speed and mix thoroughly. Chill dough for 30 minutes.
3. Divide dough into two parts. Pat out between 2 sheets of floured parchment paper. Roll to desired size.
4. Remove top sheet of paper, lightly sprinkle with a bit of flour and invert pie pan over the top of dough. Turn pan over and fit dough gently into pan. Repeat with 2nd half.
If you prefer, this dough can also be patted directly into your pan for a more rustic crust.
