4 cloves garlic, minced [+]
3 tablespoons fresh cilantro, minced [+]
3-4 pounds skirt steak [+]
2 whole limes [+]
2 teaspoons salt [+]
2 teaspoons freshly ground pepper [+]
1 cup mayonnaise [+]
1 small can chipotle peppers in adobo sauce [+]
2 tablespoons sour cream [+]
1 tablespoon olive oil [+]
1 package small soft taco tortillas [+]
2 whole avocados, thinly sliced [+]
1 small red onion, thinly sliced [+]

2 whole avocados, thinly sliced [+]
1 small red onion, thinly sliced [+]
Method
1. Rub garlic and cilantro on all sides of the steak. Squeeze juice of one half of a lime over the steak. Season with salt and pepper. Set steak aside to marinate.
2. To make chipotle sauce, add mayo to a medium bowl. Chop 3-4 chipotle peppers, depending on desired heat and add to mayo. Stir in 1 tablespoon of the adobo sauce. Add sour cream and 1 tablespoon of lime juice. Set aside.
3. Preheat a cast iron skillet to medium to medium high heat. Add a small amount of oil to pan. Sear steak for a couple minutes on each side, depending on desired doneness. Set steak aside to rest.
4. Slice steak when ready to assemble tacos. Spread chipotle mayo on soft tortilla and add steak, onions and avocados.
