Chipotles chillies in adobo sauce add a spicy but soft smokiness to this 'superfood' while the lime juice and fresh cilantro really brighten up this dish!

1 1/2 cups quinoa [+]
2 1/2 cups water
1 chipotle chilli in adobo sauce, minced  [+]
1 handful fresh cilantro, roughly chopped [+]
1/2 red onion, thinly sliced [+]
1 carrot, peeled and thinly sliced [+]
3 radishes, thinly sliced [+]
1 lime, juiced [+]
1 tablespoon olive oil [+]
salt and pepper, to taste [+]

Method

1. Bring quinoa and water to a boil, cover, reduce to a simmer, and cook for 10-15 minutes until liquid is absorbed.  Set aside for 10 minutes, covered.  Fluff with a fork and cool.

2. Combine remaining ingredients with quinoa and season to taste with salt and pepper.
