1. Bring quinoa and water to a boil, cover, reduce to a simmer, and cook for 10-15 minutes until liquid is absorbed. Set aside for 10 minutes, covered. Fluff with a fork and cool.
2. Combine remaining ingredients with quinoa and season to taste with salt and pepper.
