Steak Quesadillas in the "Quesadilla Maker"

Heat quesadilla maker. Dice up steak, onion, and pepper. Heat oil in a sautee pan over medium heat, add steak, onion, and pepper and cook, stirring, until lightly browned, about 8 minutes.
Add adobo seasong and salt and pepper to pan. Dice up tomatoes and set aside until previous ingredients are done cooking.
Once quesadilla maker is heated up, place a flour tortilla on the bottom, add sauce pan ingredients, then diced tomatoes. Top with mixed cheese and cover with a top layer tortilla (feel free to add other toppings inside for extra flavor!). Once lid is closed, it takes about 5 minutes to finish the quesadilla. Some ingredients may spill out the side but that is OK; the appliance will close the quesadilla around the edges and into 6 small triangles which can be easily cut apart once cooled for a minute.
Serve with salsa and sour cream on the side.
